Cucumber and Tomato Salad with Apple Cider Vinegar

This is a simple, fresh, and tangy salad that gains a wonderful flavor from apple cider vinegar. It is ideal as an appetizer or as a side dish with both Iranian and modern meals.

Ingredients

  • Serves 2

    • Cucumber: 1 medium, sliced into rounds or diced
    • Tomatoes: 2, chopped
    • Small onion: ½, thinly sliced
    • Apple cider vinegar: 1–2 tablespoons
    • Olive oil: 1 tablespoon
    • Salt and pepper: As needed
    • Optional fresh herbs: A small amount of chopped parsley or mint

Preparation Instructions

1. Prepare the Vegetables

Wash and chop the cucumber and tomatoes.

Thinly slice the onion.

2. Prepare the Dressing

Combine the apple cider vinegar, olive oil, salt, and pepper in a small bowl.

3. Assemble the Salad

Place the chopped vegetables in a bowl.

Pour the prepared dressing over the salad and toss gently until all the ingredients are evenly coated.

4. Serve

Serve the salad immediately, or refrigerate it for 5–10 minutes to allow the flavors to develop.

Garnish with a small amount of fresh herbs, if desired.

Essential Tips

Natural apple cider vinegar gives the salad a fresher flavor and may offer additional health benefits.

You can add grated carrots or colorful bell peppers to make the salad more visually appealing and flavorful.

For a milder tangy flavor, use slightly less vinegar and add a little more olive oil.
